Coconut Pie

Usually I try recipes before I post them. Well, I'm at the computer right now and this pie is in the oven. If it's bad, I'll delete it. From allrecipes.com. I was attracted to the recipe because it is very quick and easy to mix up. I had coconut and a pie crust to use up.

* 1 1/2 cups milk
* 1 cup sugar
* 3/4 cup shredded coconut
* 2 eggs, beaten
* 3 tablespoons all-purpose flour
* 1 tablespoon butter or margarine, melted
* 1/4 teaspoon vanilla extract
* 1 (9 inch) unbaked pastry shell

Directions

1. In a large bowl, place milk, sugar, coconut, eggs, flour, butter and vanilla; stir until combined. Pour into pie shell. Bake at 350 degrees F for 50 minutes or until a knife inserted near the center comes out clean. Cool to room temperature. Refrigerate leftovers.

Taco Soup

Easy and the kids liked it. I used mild tomatoes w/ green chiles and left out the additional can of green chiles to make sure they'd eat it. I also used ground turkey and I didn't know what chili beans were so I used black beans.

* 2 pounds ground beef
* 1 (1.25 ounce) package taco seasoning mix
* 1 1/2 cups water
* 1 (15 ounce) can mild chili beans
* 1 (15.25 ounce) can whole kernel corn, drained
* 1 (15 ounce) can pinto beans, rinsed and drained
* 1 (14.5 ounce) can stewed tomatoes
* 1 (10 ounce) can diced tomatoes with green chile peppers
* 1 (4 ounce) can chopped green chilies
* 1 (1 ounce) package ranch salad dressing mix

Directions

1. In a Dutch oven or large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.
